We believe in the boochi
Kombucha is an ancient, fermented beverage on the verge of reawakening. Most accept that the first sweet teas mixed with everyday bacteria and wild yeast, fermenting into the delicious beverage we now call kombucha, about a couple thousand years ago. Kombucha brewers today rely on SCOBYs, a gelatinous blob of naturally occurring bacteria and yeast, to convert sweet tea into an effervescent and delicious tingly drink teaming with healthy microbes and beneficial acids.
Turns out those Ancients were on to something. As microbiology progresses, we continue to explore the role of bacteria inside humans – we literally are the bacteria we eat. Fermented foods and beverages promote gut flora diversity, in turn improving digestion and strengthening our immune system (among numerous other health benefits). In many ways humans are wired to prefer fermented beverages, and kombucha is no different.
Fermented tea is limitless: ingredients, brew techniques and equipment are be blended in near infinite combinations to create a truly unique and masterful beverage. It's this variety that makes kombucha ever interesting and keeps us coming back for more.
